SMOKED SAUSAGE + EGG BREAKFAST SKILLET RECIPE

One of our favorite things we look forward to in our home are big weekend breakfasts that we typically don’t get to enjoy during the week. Normally, are routine work week breakfasts include coffee and a slice of toast, a bagel, or a pastry of some sort. Traditionally, I like to cook my go-to caramelize banana-almond flavored pancake recipe or bacon and eggs. This time I tried something new!

No need to dirty up more than one pan or bowl for this recipe! I made a smoked sausage and egg breakfast skillet. This one pan meal is simple and saves you time! To make this recipe, I used smoked sausage, fried eggs, sweet white onions, tomatoes (fresh from my mom’s garden) and garnished with fresh cilantro.

SMOKED SAUSAGE + EGG BREAKFAST SKILLET RECIPE

Ingredients
  • 2 tbsp, Olive Oil
  • Smoked Sausage (I used a pack of the Hillshire Farm brand and cut half of it)
  • 1 small sweet white onion, diced
  • 2 medium fresh tomatoes, chopped
  • 2 eggs
  • kosher salt and black pepper, to taste
Instructions
  1. Heat up your medium skillet over medium heat with olive oil. Slice your smoked sausage in a diagonal 1-inch cuts. Add the sausage to the skillet and cook until brown on both sides.
  2. Add the onions and tomatoes into the skillet; add salt and pepper and cook until the tomatoes slightly thickens.
  3. Make two small holes in the mixture and crack and egg into each well. Fry the eggs sunny-side up; season with salt and pepper. If you prefer over-medium eggs, wait until the white part of the egg cooks completely and with a spatula, gently flip over your egg.
  4. Garnish with cilantro.
  5. Serve immediately and enjoy!
