NO-SAUCE PASTA: Orecchiette with Cherry Tomatoes, Basil and Peppers in Olive Oil

Looking for a light and a delicious tasting pasta? Whether you will be cooking for family or entertaining friends, try my go-to ‘No-sauce Orecchiette Pasta’, made with olive oil recipe. You can serve this alone as an entree with a side of garlic bread or serve as a side dish with a poultry, seafood or meat.

Orecchiette Pasta

This pasta packs a lot of flavor by using all fresh ingredients such as cherry tomatoes, basil, red, yellow, and orange peppers, yellow onions and garlic. For this simple recipe, cook the orecchiette in boiling salt water until al dente, chop up the main ingredients and in a sauté pan over medium heat, combine all, except the basil, in 2 tablespoons of olive oil for 30 seconds. Sprinkle some salt and pepper to taste and reduce heat to medium low, tossing occasionally until all ingredients are soft and the onions and garlic are golden in color.

Once your orecchiette is ready, drain the pasta, place the pasta in a serving bowl then toss the sautéed ingredients with the pasta and drizzle some olive oil.

To compliment your pasta, top the dish off by sprinkling some freshly shaved parmesan cheese and basil. Serve and enjoy!
