I love to experiment with new spices in my cooking and baking that I typically don’t use on a regular basis. Sad but true, it’s only recently that I was introduced to the spice, cardamom. Remember when I made this Indian Masala Chai Tea recipe? Cardamom is commonly used mainly in Indian cooking as well as Middle Eastern cuisine. I’ve noticed a lot of dessert recipes with cardamom are showing up on Pinterest like this Cardamom Vanilla Bean Layer Cake and this Blood Orange Madeleines with Pistachio and Cardamom recipe. In case you are unfamiliar with cardamom, it is a spice made from the seed pods of various plants in the ginger family. It has a strong pleasant aroma and warm distinctive flavor and pungent taste, with hints of lemon, mint and smoke.

When I came across this rice pudding recipe from the food network show, Aarti Party, not only did I have all the ingredients, I knew it was a recipe I had to try and that it was going to taste absolutely delicious!

And I was right, my friends! Served cold or warm (I chose cold), the combination of cardamom & rose water for this rice pudding is a perfect blend that intensely enhances the flavor of this sweet and savory dessert.

Enjoy!

Note: the recipe called for 8 cups of milk but I only used 6 cups, as I like a thicker consistency in my rice pudding as opposed to a more creamer one.
