Be My Valentine’s Pancakes
I adore anything mini and even more so if they are cut into cute little shapes! For a simple and special surprise, serve up a stack of these chocolate chip, heart-shaped pancake bites to your sweetheart or your kiddos on Valentine’s day. These are actually great to serve for a birthday breakfast too! I mean nothing says “I love you” quite like a breakfast of heart-shaped pancakes. The melted chocolate chips combined with the almond flavor is a yummy combination – it’s a delicious breakfast treat they will surely enjoy!
These pancakes are semi-homemade so they were simple to make! I used Aunt Jemima Original Complete pancake mix but you can use your favorite pancake mix. To the batter, I added Ghirardelli milk chocolate chips, 1 tsp of almond extract, and 2 drops of red food coloring (I noticed that a few drops of red food coloring turned out better than the pink). When I added the batter to the skillet, I poured a larger circular amount so that I can get two to three mini hearts from one pancake. If you are using a larger heart cookie cutter, you might not need to do this. Once the pancakes are cooked, I let them cool for at least 30 seconds before using my heart shaped cookie cutters to make the heart shapes. I used 5″ inch heart-shaped cookie cutter that I found in the dollar section at Target – it was part of their Valentine’s day decor. However, I found this cute set, here.
For the toppings, alongside the mini stack of heart-shaped pancakes, I also added pink food coloring to the whipped cream. I topped the whipped cream with raspberries and a couple of chocolate chips. You can add heart-shaped bacon, if you prefer.
