There are some of us that plan ahead and bake our desserts and then there are some of us that look for quick and easy semi-homemade dessert treats to make. Depending on the occasion, you might find that I am 50/50 when it comes to preparing a dessert. I can recall a few times when we have had impromptu guests over and depending on the time of day, I may offer coffee or tea, and I like to have something alongside the hot beverage, so that guests can enjoy.
Being that we are in the holiday season, some of us may already have a bag or box of gingerbread cookies. Rather than placing a couple of plain cookies on a dessert dish, how about stepping it up and make a yummy filling to fill your gingerbread cookies with?! You only need three ingredients to make this filling and most of us probably keep these staples in our fridge and pantry…
In a medium-sized bowl, mix 8 oz. cream cheese, softened, 1 cup of powdered sugar and 1 tsp. of vanilla extract. If your cream cheese is cold, you can use a mixer to cream your ingredients.
Whether you’re making a dozen cookies or half a dozen, you can alter the ingredients to make a sufficient amount of filling for your gingerbread cookies. You can either serve your cookies open-face and sprinkle some ground cinnamon on top of the filling or you can sandwich two gingerbread cookies together. Depending on an individual’s preference, I like to offer both options!
Bring out your inner Martha Stewart and place your prepared cookies on festive dessert tray. I found this adorable marble & wood sleigh tray at TJMaxx! Next, you can add a bit of Christmas greenery and/or wrap a string of twinkle lights to your tray of cookies. Viola! Your guests will wonder how you whipped this up so quickly and will appreciate the unexpected presentation!
