Friday is almost here, Daylight Savings time occurs this weekend – which means spring is right around the corner and we get to enjoy lighter evenings. I say those are great reasons to celebrate and serve up a delicious libation!
For a light and refreshing cocktail, try my Raspberry Mojito recipe. The pairing of basil and mint is a perfect combination of flavor, the Chambord’s rich raspberry and vanilla notes, mixed with the sweetness of the simple syrup is a definite must-try cocktail.

A LIGHT & REFRESHING RASPBERRY MOJITO RECIPE

Serves: 2-4
Ingredients
- 6-10 raspberries, fresh
- 6-8 mint leaves, fresh
- 2 large basil leaves, fresh
- ½ cup simple syrup
- ½ liter club soda
- ½ cup of white rum
- ⅓ cup of Chambord Black Raspberry Liqueur
- Juice from 1 large lemon
Instructions
- Rough chop mint and basil
- Using a cocktail muddler, muddle the raspberry, chopped mint, basil and add simple syrup
- Let it sit for one minute
- In a pitcher add rum, Chambord, lemon juice, and the muddled mix of simple syrup
- Stir well and add club soda
- Serve with crushed ice and add raspberry and mint for garnish
