¡Ay, caramba! Cinco de Mayo is just a few days away (it’s easy to forget what day it is from the quarantine). Sheltering at home will not keep us from celebrating Cinco de Mayo. While it will just be the two of us, I still plan on cooking a new Mexican-inspired recipe to enjoy. The siesta will continue as I had scheduled a virtual family Cinco de Mayo dinner for Saturday night on May 9th. My brother-in-law’s birthday falls on that same day, so it will be a double celebration!
