At our house, we enjoy switching up our favorite recipes by adding different cooking ingredients to see if we can enhance the flavor of recipe or simply enjoy eating a different version of it. And that’s exactly what we did with our super satisfying avocado toast breakfast recipe. We topped our avocado toast with sautéed sweet white onions and cherry tomatoes. To add a little heat, we sprinkled red chili flakes.
Perfect for anytime of the day, this spicy avocado toast with egg was quick, simple and delicious. I’d love to know, what’s your favorite way of serving up avocado toast?
*serves 2-4
ingredients
- 1 avocado, ripe
- 1 small sweet white onion, diced
- 6 cherry tomatoes, sliced in half
- 1 tsp lemon juice, fresh
- 2 eggs, fried
- salt and pepper, to taste
- red chili flakes, to taste (optional)
- a hearty crusty bread (oven toast your choice of french bread or ciabatta bread)
directions
- Cut your cherry tomatoes in half and dice your onion. To taste, add salt, pepper and red chili pepper flakes
- Add 1 tbsp of olive oil to a small frying pan, over medium-high heat and add the onions and tomatoes; season with salt and pepper
- Sauté until onions are fragrant and the until tomatoes soften and skins just begin to wrinkle, about 2 minutes
- Smash the avocado, add salt, pepper and lemon juice – spread on the toasted bread
- Top with a onions and tomatoes
- Top with a fried egg and top with more onions and tomatoes
Serve and enjoy!
*you may have some leftover avocado that you can use to make two more avocado toasts, without the fried egg (if you prefer).
