SMOOTHIE: Pineapple, Coconut, Banana & Ginger

My sister is big on smoothies and my mom has been raving about her smoothie concoctions, so I decided to try this one. Result…it was light and refreshing! What is your favorite smoothie recipe?

Pineapple, Coconut, Banana & Ginger Smoothie

Serves: 2

Ingredients

  • 2 slices of fresh or frozen pineapple, cut into chunks
  • 1/2 of a medium banana
  • a sliver of ginger
  • 1 cup of Silk Pure Coconut Milk
  • 2 tbsp of sweetened coconut

Directions

  • Put all the ingredients in a blender and blend until smooth
  • Garnish with additional pineapple and rim the glasses with honey and dip in the sweetened coconut, if desired. Serve immediately.

*Freeze your fresh pineapple and banana ahead of time so that you won’t require ice.
