Back in June, when I found out I was approved for the immunotherapy clinical trial, my spouse bought us a couple of new cookbooks that concentrated on healthier eating. It’s a lifestyle change that we are slowly adapting. One of those cookbooks, is #1 New York Times bestseller; Medical Medium Life-Changing Foods. In this book, author Anthony William, delves deeper into the healing power of over 50 fruits,, vegetables, herbs and spices that can have an extraordinary effect on health. I’ve tried several recipes from this book, thus far and I’m looking forward to sharing my favorites here with you! Let’s eat a little healthier, together!
I am a total snacker! By 10/10:30am and again in the late afternoon, I’m looking for a snack and sometimes a piece of fruit is just not enough. I’ve been introducing dates into my diet and I’ve been astonished at how many snacks and desserts you can make by using them…total game changer! I’ll have to share the recipe for some sweet and chewy apricot bars. Today, I’m sharing this quick and easy Raw Date Granola. This sweet and salty combo snack is a perfect snack for anyone on the go. You can make a big batch, store in a mason jar in the fridge and eat it by itself or in a smoothie bowl. Speaking of smoothie bowl, I made a delicious one yesterday – I will be sharing that recipe with you next week!

- 2 cups dates, pitted
- ¼ cup coconut flakes
- ¼ cup almonds
- ¼ teaspoon sea salt
- Process all the ingredients in a food processor until roughly combined. Store the granola in a jar in the refrigerator for up to 2 weeks.
