Happy first day of October, friends! When fall rolls around, it seems only natural to consume everything pumpkin related, right?! On our recent stop to Trader Joe’s, I picked up their Pumpkin Pancake and Waffle Mix. I had a feeling this was going to taste good and it surely did not disappoint!
Make ahead these quick and easy pumpkin pancakes for the kiddos on busy school mornings. These pumpkin pancakes are perfect to not only enjoy on those early crisp fall mornings but for a crowd-pleasing holiday brunch as well as a breakfast-for-dinner, on those chilly evenings.
To top off these already delicious pumpkin pancakes, I drizzled this flavorful vanilla infused maple syrup. The combination of the two were AMAZINGLY good!
Spiced, stacked, and loaded with flavor, I garnished the pancakes with Reddi Whip Coconut Milk coconut whipped cream topping, fresh walnuts and a dusting of pumpkin pie spice. Your tastebuds will thank you…it was borderline a sumptuous dessert! After all, it is the season of comfort!
