Looking for an easy brunch entree? Try these easy to make ‘Feta, Tomato and Ham Frittatas’. These individual servings are also great for breakfast on-the-go! Oven baked in muffin tins, these egg frittatas are packed with lots of flavor from ham, shallots, chives, tomatoes and feta cheese. Give it a try and let me know what you think. Happy Monday!

ingredients
- 7 sprays cooking spray
- 6 large eggs, beaten
- 1/4 cup of milk
- 2 slices of ham off the bone deli meat, chopped
- 2 tablespoons diced chives
- 1 shallot clove, minced
- 7 cherry tomatoes, sliced in half
- crumbled feta cheese
- salt and pepper to taste
directions
- Preheat the oven to 350 degrees. Spray 7 muffin tin cups with cooking spray.
- In a medium mixing bowl, whisk eggs, milk, salt and pepper.
- In the same mixing bowl, combine the ham, shallots, and chives to the egg mixture.
- Spoon mixture into the muffin tin cups. Be careful not to fill each muffin cup to the very top because the eggs will puff in the oven.
- Slice each cherry tomato in half and add two halves to each prepared muffin tin.
- Bake in preheated oven until frittatas are golden, are set in the middle and puffed, for about 22-25 minutes.
- For the last minute, sprinkle feta cheese on top of each frittata and let melt.
- Carefully run a spatula around the edge of each frittata to loosen from the muffin tin and gently lift out of the pan.
