During this time of self-quarantine, I found myself cooking pretty much every night. Do you find that to be the same for you? I’ve used these days at home to experiment with new vegan recipes. While I’ve enjoyed trying out plenty of dinner recipe options from either online or new cookbooks I own, lunch on the other hand has been just a bit challenging. Typically, I’ll cook enough food for dinner so that we can enjoy it the following day for lunch.
The one sandwich I sorta miss after turning vegan is tuna fish sandwiches! Growing up as a kid, it was my absolute favorite sandwich to eat. I was happy to have found this Vegan No-Tuna Salad Sandwich recipe via Forks over Knives. This recipe was adapted by Minimalist Baker who originally created this Vegan Chickpea Sunflower Sandwich. I’ll need to try out the garlic herb sauce the next time I make this hearty and delicious-tasting sandwich.
