Whenever I have slightly over ripe bananas, I like to use them in a dessert so they don’t go to waste. Adapted from this recipe, I tweaked this classic banana bread by adding a 1/2 cup of chopped walnuts and a 1/2 cup of sweetened coconut flakes. It was a quick and easy recipe and they turned out delish, especially when eaten warm, right out of the oven! I could have put icing on top, as the recipe calls for but decided it was just as good without it. It’s not too sweet and it has a crunch like texture on the outside and oh, so moist in this inside. It’s a perfect morning or afternoon treat!
