Get the most out of your summer!
It’s almost Friday, which means it’s the start of the weekend and you deserve to treat yourself to a cocktail! I have this great cocktail recipe you will enjoy…it’s this refreshing grilled pineapple mojito full of fresh pineapple, lime juice and fresh mint. It’s a tropical vacation in a glass, or in this case in a pineapple! You can skip the rum to make it virgin.
I found this summer cocktail recipe in our Blue Apron recipe newsletter that occasionally comes in our meal-kits. Since I’m still on medication, I had my spouse replicate and taste test this recipe. The verdict..I was told the charred pineapple definitely brought out the fruity flavor of the pineapple and it was quite refreshing. I decided it would be fun to serve-up these cocktails in pineapples – it’s much more fun and festive. It will have your guests feel like you are taking them straight to the tropics! - 2 oz. white rum
- 1 oz. fresh squeezed lime juice
- 2 tsps granulated sugar
- 4 to 5 large fresh mint leaves, torn into pieces
- Club soda
- 1 cup crushed ice
- ½ ring fresh pineapple, sliced ½-inch thick
- Grill the pineapple 9 to 11 minutes per side, or until lightly charred and softened. Transfer to a cutting board and small dice.
- Place the diced pineapple, lime juice, sugar, and mint leaves in a highball glass. Using a muddler or spoon, smash until the pineapple is broken down and the sugar is dissolved. Add the rum; stir to combine. Top with crushed ice and a splash of club soda. Garnish with additional grilled pineapple and mint leaves, if desired.
