After enjoying a wonderful birthday dinner this past Saturday, I had one crab cake leftover that I took home with me – so yesterday afternoon I decided to make a side of mashed potatoes. Adapted from this Taste of Home recipe, since I didn’t have fresh Parmesan cheese, I substituted it with Asiago cheese and used red bliss potatoes. This side dish is packed with flavors of garlic, sautéed onions and asiago cheese.
Note, this recipe calls for you to bake a garlic clove but if I want to whip up this recipe quicker, I simply add 5-6 peeled garlic cloves in the boiling water of potatoes. After the potatoes are cooked and drained I do not discard the garlic, I smash it and combine it with the rest of the ingredients in a stand mixer, along with the potatoes.
